Since our friends and a zillion kids are coming to dinner tonight, and I have extra Harry & David’s Meyer Lemon Marmalade in the fridge, I plan on mixing 3 easy ingredients together to make a sweet, delicious butter for the bread we’ll be serving.

If you have good bread to serve this recipe with, you’re golden.

If you don’t have good bread, save it for when you do. :)

There’s something about mixing good bread with a unique bread topping or dipping sauce or oils that, in my mind, can be a meal by itself! :)

Speaking of, if you live here in southern Oregon, I recently discovered the best bread around at Harry & David Country Village. It’s made local at a bakery in Central Point, outside of Jacksonville where I grew up, called Coquette Bakery. They make it in a commercial baking kitchen inside an old converted dairy barn. How cool is that? You can read all about this wonderful place, which I hope to visit soon! :)

We tried the bread and we’re sold. The very best? Gettin’ Figgy and the Gypsy Rose Marie were our favorites.

So here’s my butter recipe today that will wow your guests! It’s so easy, you just whip it, refrigerate, and serve!

You can use any flavor of marmalade, but Harry & David’s unique marmalade flavors will really work for you! (By the way, these marmalades are sold in glass jars which you can repurpose into a drinking glass. Buy 8 marmalades? You’ll have 8 new beautiful glasses! Very cool.)

Recipe: Meyer Lemon Honey Butter {ReluctantEntertainer.com}

Summary: Made with Harry & David’s Meyer Lemon Marmalade

Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup honey
  • 3 T. Meyer Lemon Marmalade

Instructions

  1. Mix the ingredients together in a mixer bowl.
  2. Whip until very light; separate into 2 logs on plastic wrap. Roll and store in refrigerator.
  3. Or, put into 2 small dishes or a crock; chill until ready to use.

Preparation time: 5 minute(s)

Number of servings (yield): 8

    Speaking of Harry & David.. I worked the Taste of Harry & David this weekend & tasted your delicious bite you created with goat cheese, peach… blackberry on top.. and I don’t know what else.. I LOVED IT.. and I usually don’t like goat cheese!
