Pecan Pie Cobbler

I noticed I had some crust in the freezer and I remembered this dessert so I did a little Googling.

I came up with this one from Pillsbury but I didn't have everything I needed so my recipe ended up being a cross between that and the one on the label of the Karo Syrup bottle.

The hardest part making this Pecan Pie Cobbler recipe was getting the crust to act right but once I got it pinched back together it came out just fine!

Does Pecan Pie Cobbler need to be refrigerated?

If you are planning to serve your pecan cobbler within 2 hours, feel free to leave it out. Be sure to place leftovers in the refrigerator. If it will be longer than 2 hours before you serve your cobbler, place it in the refrigerator after it cools off.

You can use this Canned Apple Pie Filling to create a simple Apple Pie Cobbler for a quick dessert.

Can you use chopped pecans?

If you only have chopped pecans available, don’t let that stop you from making this cobbler. Chopped pecan will work equally well in your cobbler. You can even use a mixture of chopped and whole pecans for more texture to add more texture to your cobbler.

Can you use light corn syrup in Pecan Pie Cobbler?

You can use light corn syrup instead of the dark. I would also suggest swapping the plain sugar for an equal amount of tightly packed brown sugar so that you get that pretty caramel color that makes pecan pie look so yummy.

If you'd like a lower carb dessert my Apple Pie Wontons are an easy and delicious treat.

Can you freeze Pecan Pie Cobbler?

Get ahead on your Feast Day prep by cooking your Pecan Cobbler ahead of time. Once it’s completely cooled, wrap it tightly and freeze. I would use it within a month so that it tastes fresh. Be sure to take it out in time for it to thaw well. If you’re going to use it within 5 days, you can rightly wrap it and leave it in the fridge.

Can you make Pecan Pie Cobbler without a crust on bottom?

Yes, you can make this cobbler without the crust on bottom. Just use one crust on top. You can also just use a crust on bottom and make it more like a pie. It will be more pie like but still a large enough amount to feed a larger crowd.

Can Pecan Pie Cobbler be made with cake mix?

Cake mix is a great substitution for pie crust. I think a Butter Pecan cake mix would make this a next level dessert. Just sprinkle your cake mix over your pecan filling. No need to stir it in. Feel free to add a few pats of butter to the top of the cake mix if you’d like.
