We are big fans of taco soup around here and have tried quite a few different versions. I love how I have a variety of recipes to choose from when I am in the mood for taco soup. Since we have had so many readers asking for recipes with fewer portions, I thought it was time to convert one of our favorite taco soup recipes. I really hope you enjoy this Crock Pot Beefy Taco Soup for Two as much as we do!

What You Will Need for Crock Pot Beefy Taco Soup for Two

Ingredients Needed

  • 1/2 lb ground beef, browned and drained
  • 1 cup stewed tomatoes, undrained
  • 1 cup kidney beans, undrained
  • 4.5 teaspoons taco seasoning
  • 8 oz can tomato sauce
  • Garnish: Shredded taco blend cheese and sour cream

  • Cooking Time: 2 to 3 hours on low or 1 to 1.5 hours on high, stirring halfway through cooking

Ingredients

  • 1/2 lb Ground Beef browned and drained
  • 1 cup Stewed Tomatoes undrained
  • 1 cup canned Kidney Beans undrained
  • 4.5 teaspoons Taco Seasoning Mix
  • 8 oz can tomato sauce
  • Garnish: Shredded Taco Cheese and Sour Cream

Instructions

  • Combine ingredients in a 2.5 to 4 quart slow cooker.

  • Cover and cook on low for 2-3 hours or on high for 1-1.5 hours, stirring halfway through cooking and right before serving.

  • Serve with shredded taco cheese and sour cream.
